PROJECT RACINE

CONCEPT

Racine ("Ra-seen") is French for "Roots" in English. Pierre and Joanna's dream is to take both of their many years of experiences in the restaurant industry to apply a deep foundation for their restaurant, so that they may lay roots within the city of Seattle's growing community.

Racine will be an upscale casual dining experience in a relaxed and lively atmosphere. Offering guests high quality, locally seasonal produce, meats and seafood as well as local and international fine meats and cheeses. Racine aims to showcase food cooked with precision and executed with influences of modern and classic French techniques. Food that is thoughtfully executed, yet unpretentious and inviting.

Pierre and Joanna met in the kitchen of Aureole, New York. Working side by side, they became a dynamic team that challenged each other professionally. Each brought their own style, technique and experiences to create the best possible dishes together.

Sharing the same passion and dreams of having their own restaurant, they moved to Seattle. A city rich in the highest quality seafood, meats, and produce. Pierre and Joanna aim to bring their years of experience and their own style to imprint on Seattle's growing food culture. They hope to create a place that reflects their passion for food that is explored, experienced and enjoyed together.

OUR FOOD

Racine is a collaboration of styles from both Chef Pierre and Joanna's experiences in their many years of fine dining restaurants. Racine's focus is to showcase the abundance of fresh produce and

seafood, local farms, butchers and cheese mongers from the Pacific Northwest. Offering an extensive selection of wine, with a focus on local wineries and local crafted beverages and distilleries. While the emphasis is on local products, with Chef Pierre and Joanna's cultural backgrounds, Racine will also introduce products from the world that complement and elevate each dish and experience. Racine's approachable and contemporary menu is ever evolving with the inspirations of the seasons and the freshest ingredients. With the blend of seasonality and influences from Chef Pierre and Joanna's roots, their goal is to introduce guest to new, exciting ingredients and techniques with thoughtfully executed food designed to tell a story and take you on a journey.
